One day,i had all the healthy vegetables in my fridge like cucumber,carrots,corn,beetroot ,so i thought what can i do with these so that it turns out to be something amazing .
That's when this brilliant idea striked to me that why not make a salad which will not at all be boring like just the rounded cut pieces that we have normally.
So i started with dicing all my ingredients,mixing some of this and some of that , and guess what ? It was so..so...so very amazing and yummy to taste.And main thing of all this salad is loaded with anti-oxidants which helps to get rid out of harmful toxins from our body.
Some more benefits in detail :
Carrots : They are rich source of antioxidants,fiber,vitamin c,vitamin k .. oh the benefits of carrots are endless.
Cucumber : They are great source of vitamin k,vitamin c,phosphorous,magnesium.They also help to hydrate our body
Beetroot : They are rich in nutrients that help to improve your immune system and they contain folic acid,iron,zinc.Beetroot are great to lower blood pressure.
Corn : Corn is a great source of fibre and also it promotes good eye health
Tomatoes : A single tomato can provide about 40% of the daily vitamin c requirement.
So many great benefits right?
So lets see how to make it
You will need :
Ingredients for tangy corn salad |
Ingredients :
1 cup boiled corn
1 medium sized cucumber chopped
1 medium sized carrot chopped
1 small tomato chopped
1 small onion sliced
1 medium sized beetroot chopped
Coriander leaves chopped finely
1 teaspoon of salt
Half juice of lemon.
Method :
1) Chop the cucumber,carrots,tomatoes,beetroot into small dices.
2) Slice the onion in julienes.
3)Take a bowl and mix all the ingredients,add the boiled corn,add 2 tablespoon of finely chopped coriander leaves, juice of lemon and 1 teaspoon of salt.

4) Mix everything nicely and serve immediately.

Tip: You can also add roasted pine nuts,yogurt,some ice berg lettuce leaves for more exciting flavours.
It tastes better this way too.
